Places to Stay: I usually stay at the Thavansouk Guest House, at the south end of the town. It's away from the crowds and has a lovely view overlooking the river. I think it's about $40USD a night for one of the units right in front.
There are MANY places in Vang Vieng, ranging from ewww-you-must-be-joking to deluxe that are bound to have rooms available. A couple of the nicer places on the river are the Vansana and the Elephant (something...).
For a very rustic stay, there are huts on the islands in the river. Take your own blanket.

Things to do and see:
Go across the river to the big cave and little swimming hole. The cave is interesting and there are usually guides who will take you in. The swimming hole is lovely on a hot day.
Float on an inner tube down the river. Stop at bars along the way (in your inner tube...no need to get out).
Go to the organic farm north of town for some Hibiscus tea and good food. See the mud brick buildings.

Restaurants: Have a bucket of 'happy' cocktails, or have a 'happy' milkshake with your 'happy' pizza, while you lay back and watch a movie from your table. Various restaurants.
Eat a hot banana pancake (crepe) or other flavour as you wish, from a variety of street stalls. Be sure to have the sugar AND the condensed milk on top! So bad, but so good!
